Permata Singapore launches Nusantara Buffet with 60 dishes at Gedung Kuning

Gedung Kuning is Singapore’s first Nusantara lifestyle destination with four different offerings – Amazing Chambers Singapura, an escape room with games based on Singapore’s history, Permata Singapore for Nusantara Buffet, a Book Cafe and Weddings and Community Events, which will come soon.

Inspired by the trade in the 1920s, where diamonds and gemstones were sold at Kampong Gelam, Permata, which means jewel in Malay, is the first Nusantara Buffet Restaurant at Gedung Kuning.

Boasting over 10,000 square feet, Gedung Kuning was built in the late 1850s. Its exterior was inspired by Palladian architecture, which is a European style that was trendy those day.

The interior of Gedung Kuning, like the former Istana Kampong Glam next to it, follows the design of a traditional Malay house.

In 1864, Tengku Mahmud, the youngest son of the Sultan of Johor, named his mansion Gedung Kuning, which means Yellow Mansion, after its yellow walls. Yellow is a royal colour commonly associated with Malay Sultans.

With over 60 Nusantara-inspired dishes for both lunch and dinner, Executive Chef Firdauz Nasir is on a mission to elevate Nusantara cuisine in Singapore while ensuring that key nostalgic dishes, such as Ulam, Kerabu and Lemang, remain on the menu.

Chef Firdauz has added modern twists to the menu with dishes like Wagyu Beef Rendang, Ayam Binjai and Tempoyak Ikan Patin that pairs perfectly well with Nasi Bunga Telang, Permata’s Signature Blue Pea Rice.

Wanting to offer a truly premium Malay and Indonesian dining experience for the food lovers in Singapore, Chef Firdauz has curated a Seafood on Ice Station which has a selection of fresh seafood along with Live Noodles, Live Roti Jala, Live Carving Station and a Grill Station that includes Beef Sirloin Steak, Locally Farmed Chicken, Marinated Lamb Flap and the all-time favourite Satays.

The Grilled Meats at Permata Singapore are marinated with Nusantara sauces and spices and can be paired with six different types of hand-blended sambals that make the perfect condiments to your meal.

Do try Permata’s Buah Keluak Brownie, made with a native seed commonly used in Javanese cooking.
