Exclusively from 2 to 16 September 2021 and presented in the historic Tiffin Room at Raffles Hotel Singapore, savour exquisite new menu creations specially crafted by Kuldeep Negi (right), Chef de Cuisine of Tiffin Room, and complemented with the signature tipples of Yugnes Susela (below), Founder of The Elephant Room.
Presenting a uniquely tantalising feast for the senses, each exceptional course is paired with a delectable Indian-accented cocktail from The Elephant Room, a culture-forward cocktail bar which pays homage to Singapore’s Indian heritage and culture. Inspired by the streets of Little India, each cocktail is infused with Indian spices and aromatics and prepared with ingredients freshly sourced from the heart of Little India – Tekka Market and its surroundings.
Begin your multi-course gastronomic experience with the delightful Jhinga Till Amrud – an appetiser consisting of crispy fried prawn heighted with sweet and spicy guava chutney and masala peanuts – complemented with Buffalo Road, a delicious take on gin & tonic featuring juniper spirit, pink guava and vetiver.
With the next course, enjoy Paan Galouti Kebab, succulent lamb kebab freshly grilled in the tandoor and presented with fried betel leaves and a fragrant mango and rose petal chutney, paired with Race Course Plantation, a rum-based concoction with Two Indies rum, sugarcane juice and coconut, inspired by the lush sugarcane and coconut plantations of olden time Singapore.
For the main course, delight in a flavoursome spread of delicacies presented in the iconic copper tiffin boxes. Signature highlights include Madras Fish Curry, sea bass curry made with a special spice blend; Dalcha Chop Masala, lamb chop curry with yellow lentils and spices; and Paneer Pulao, Indian Basmati rice cooked with cottage cheese and perfumed with cumin. Savour their flavours with Mr. Desker, built with Royal Challenge Whisky, meat spice distillate and Amrut single malt.
Round out your experience with Gur Kheer and Gur Mini Cheena Pyas, a rich and creamy dessert combining rice and milk dumplings cooked with jaggery. This sweet treat is accompanied by Sippin @ Seventy-eight, which features Bru Coffee rum and coconut kombucha spiced with caramelised onions.
During this promotional period, a limited selection of the regular Tiffin Room aÌ la carte menu will also be made available.
